2 eggs yolks and whites separated
4 tablespoons sugar
8 oz. mascarpone
8 Biscoff cookies

Chocolate ganache|
8 oz. semi sweet good chocolate
1/2 cup heavy cream

Directions for the Ganache
Cook the chocolate chips, heavy cream, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally

Directions for the Tiramisu
In a mixer with the whip attachment, whip yolks and sugar until thick and pale in color (ribbon stage). Add mascarpone and whip until well incorporated. In a separate bowl, whip egg whites.  Whip to a stiff, glossy peak. Fold whites into mascarpone and yolk mixture.

In small glasses alternate (see pictures)
1 layer of crumbled Biscoff cookie
1 layer of tiramisu
1 layer of chocolate ganache
